I do a Chicken with sweet basil.
Carmelize onions and sweet basil in olive oil then add chicken breast cubed in 1 inch cubes.
Cook till chicken is done and all moisture is drawn down.

Next is add Half and Half and some flour to thicken then I add Parmesan and Romano cheese.

I cook up some garden spirals pasta and serve it smothered in the chicken.

I thought I was hungry so I filled the plate and could only eat half of it, it will be good for a snack latter though.
I know what you mean! seems like the older I get I just cant eat like I use to. Or even what I use to for that matter, it all gives me heart burn anymore.

Wow, Sounds Great Charlie - Like the Ultimate Alfredo - Almost too dangerous if any is left over.
I bet in two hrs - it's history.

Best I could do tonite with Monster Garage Kitchen - Micro Wave & Toaster Oven -
Served up some Jack Daniels Beef Brisket - bathed in tangy BBQ sauce, Not bad - Fresh Ground pepper banged up the hang-time.
with toasted slices of Garlic Bread with ice cold Arizona Green Tea.

I made some Betty Crocker Loaded Casserole potatoes earlier - about a 20 minute tour in the micro.

Y'all are making me hungry, and I just ate lunch.
Slow cooked Boston Butt, chopped and served on a toasted potato bread bun.
Slice of peach cheese cake for a chaser.

Just finished off the last of it for dinner tonight and it was even better after sitting in the fridge overnight to let the different items meld together.

I just figured out the cost per serving and it is around $2.50 so not to bad.

Add some garlic bread if you like to sop up the extra cheese sauce.

Here is mine : tomatoes and chicken breast

¼ cup chopped fresh parsley
1 teaspoon chopped garlic
Pinch cayenne
1 tablespoon ground cumin
½ teaspoon ground coriander
Salt and freshly ground black pepper
About 1½ pounds boneless chicken breasts pound them down until even thickness
2 tablespoons olive oil
2 cups chopped tomato canned is ok if you must

Cooking:

Heat the oven to 400°F.
Mix everything and rub half on the chicken.

Mix the remaining cumin with the olive oil, tomato, and some salt and pepper; spread it in the bottom of a roasting pan. Put the chicken on top and spread the remaining tomato mixture over it.
Roast until the chicken is tender and cooked through, 20 -30 minutes is about right. , basting once or twice with pan juices if you want to help it turn a darker color

As I get older I just pop acouple before most meals ... very pleasant tasting ...
