I put new pipes on my bike, opened the a/f screw 2.5 turns and put a thunder needle on the third rung from the top. First off, do I need to change the jets (I think the bike runs hot and definitely backfires)? Second, how do I open the carb without taking it out (I don't trust myself to take it out)?

If all you have done is change pipes then you only need to turn the A/F screw. I am not familiar with your needle but using a stock needle there is no need to do anything other then adjust the AF screw. IF, and that is a BIG IF, you need to adjust the needle then just add a shim to the stock needle. No rejet is necessary.

Thank you! Do you have any tips on getting at the carburetor if I do decide to rejet? I was thinking that maybe I can use an offset screwdriver or something to open the float cover.
drain the bowl first, then, just loosen the clamp that holds the carb to the rubber manifold boot. then you can "rotate" the bottom of the carb towards you. It will kind of "pop" out of the rubber boot.

then remove the screws holding the bowl on, and then "swing" it out of the way rotating it on the throttle linkage
