I have a 04 vtx 1300 carburated that I bought for cheap. It sat in a garage in Socal for 3 years. Did basic resurrection maintenance. Cleared the old gas new oil and battery. Did a novice carb rebuild (my first) new gaskets cleaned it, new piston and float valve. The bike started and I put like 60 miles on it. It sat for a week, I drove the bike again one night for like 8 miles. Next morning it starts up fine but dies with throttle. If I slowly Rev it it'll be fine sometimes. Very inconsistent.

Sounds like carb issues. I recommend a deep cleaning (perhaps this is another deep cleaning) and then a tuning using a Factory Pro jet kit and following the carb tuning instructions available here on the Cafe in the "Carb - what effects what" thread.
