Pair valve removal.

I'm a little confused about this modification. Can I just order a dimple cover and replace the old cover? do I take off the reed valve assemble or just leave it on and use the dimple plate

The Reason for the dimpled plate is to make room for the head of that screw on the reed valve. The reed does stay in because of the gasket.

When I did mine I used a flat plate and just grabbed the screw with a pair of vise grips and just tore it out.

Yes, with dimpled blockoff plates, leave the reed valve and screw in place. There is more that you must do, however, related to the vacuum hoses and other related hoses and using the rubber stopper supplied with the blockoff plates to plug the resulting hole in the back of the airbox. The instructions will detail all of this.

I had to literally drill out that small screw and cut it out with a grinder eventually I went with non dimpled plates definitely added a hour if not more to my install time.

I did this mod last week. Ordered from Goheen Goheen Garage | goheencycles and very happy with them. Took longer to find my stool than it did to install the Dimpled plate. Course, I had the tank off.

I'd definitely go with the dimpled plates from Goheen Garage,I'd just happened to of ordered some before watching his videos but from my experience that screw is as hard to get out as mentioned. 🤙
Takes 30 seconds to grind off the screw end and remove the screw. Why pay more?

Everyone doesn't have the tool/space to grind the screw.

I did, but I waned my mod to be fully reversible, I kept all parts removed and boxed it up. Perhaps some day I, or the next owner may need it for emission testing.
Can you just disconnect the vacuume hose that actuates the system and plug it off the reeds prevent backflow correct?
While that is likely to work, it leaves hoses and other voids that are sealed off from the external environment and tend to collect condensation. I have read that these hoses and other voids will fill with water from condensation eventually which can cause corrosion problems.
Ok I could do that to see if I like the sound and then get the plates to block it off when I take the tank off to check the valves possibly?
Yes you can but why do the work twice?
I can reach the vacuum hose without taking the tank off since I can just cut it and plug it off then if I decide to go back with it I can just put in a coupler
I just plugged them hose and it’s still popping on decel just as bad what else could cause this ?
After I removed mine, and used the dimpled plates, I still had the de-cel popping. When I later replaced the exhaust gaskets, that eliminated probably 90% of it. So if the gaskets aren't removed before re-installing the pipes, it'll happen again. They are a crush gasket, intended for 1 time only. They are very hard to see and not exactly easy to remove. But they're there. Many threads about this. If you run a fuel manager, such as PC III, the best settings are 2,0,0 with the 2 being richer down low just for that reason.
